Spareibs with Barbecue Sauce

Spareibs with Barbecue Sauce

Ingredients:
 

  • Pork spareribs, about 1 lb. per person, cut into 10 rib sections

Sauce:

  • 1 cup tomato catsup
  • 1/4 cup lemon juice
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon horseraddish or dijon-style mustard
  • 1 tablespoon grated fresh onion or 1 teaspoon dehydrated onion flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried oregeno
  • 1/4 teaspoon Tabasco sauce
  • 1/4 teaspoon cayanne pepper


Directions:
Combine all the sauce ingredients in a small saucepan and simmer them for ten minutes. Remove the pan from heat and let cool. While the sauce cools, parboil the spareribs for 15-20 minutes. Remove the ribs from the water and let cool. Stir the cooled sauce to blen the flavors and pour it over the spareribs. Place thje sauced ribsong with all the sauce intoarge zippered freezer bags. Later, when you get to basecamp, make a charcoal fire, and when the coals turn grey, grill the spare ribs for 15-20 minutes, turning at intervals and basting with the sauce from the freezer bags.
