Mexican Rice
Ingredients:
- 1 Onion Chopped
- 4 Cloves Garlic, chopped
- 1 16oz can chopped Tomatoes w/juice
- 2 cups Chicken Stock
- 1 can Peas
- 2 cups Rice (not instant)
- 5 Tablespoons Bacon Drippings
Tools:
- Covered 12" Skillet
- Fire (Kids ask for help from your parents before doing anything with fire)
- Wooden Spoon or spatula
Directions:
Brown onions, garlic and rice in the bacon drippings. Add tomatoes (cut
up) and juice and chicken stock. Stir once. Cover and simmer 20-30
minutes or until rice is done. Add drained peas and serve.
