Mexican Rice

Mexican Rice

Ingredients:

  • 1 Onion Chopped
  • 4 Cloves Garlic, chopped
  • 1 16oz can chopped Tomatoes w/juice
  • 2 cups Chicken Stock
  • 1 can Peas
  • 2 cups Rice (not instant)
  • 5 Tablespoons Bacon Drippings

Tools:

  • Covered 12" Skillet
  • Fire (Kids ask for help from your parents before doing anything with fire)
  • Wooden Spoon or spatula


Directions:
Brown onions, garlic and rice in the bacon drippings. Add tomatoes (cut up) and juice and chicken stock. Stir once. Cover and simmer 20-30 minutes or until rice is done. Add drained peas and serve.
